The First Table

For Ngon’s Kitchen’s first pop-up dinner, Thuy invites guests to gather around a summer Vietnamese table inspired by the places and memories that shaped her cooking.

This intimate dinner is not meant to represent all of Vietnam in one evening. Instead, it is a personal introduction to the flavors Thuy returns to often: the warmth of family meals, the quiet elegance of Hanoi cooking, and the coastal freshness of Ha Long, where she grew up.

The evening is inspired by the balance and subtlety of northern Vietnamese cooking: fresh herbs, bright acidity, savory depth, fragrant broths, grilled aromas, and dipping sauces that bring each dish to life. From Hanoi, the menu draws on flavors that are refined, layered and deeply tied to tradition. From Ha Long, it carries the freshness of the coast and the generous spirit of food shared at the table.
